If you like me want to keep added sugar off your diet but still want to have the occasional treat, these No-Bake Oatmeal Walnut Cookies are a pretty yummy option and ready in just minutes – I can assure you just one of these will satisfy your sweet tooth and keep you going for hours with energy and stable blood sugar, while giving you plenty of nutrients, including omega-3s, antioxidants, minerals and fibre.
The recipe is my own take on a recipe from the inspirational book by Dr Micheal Greger 'How Not To Die Cookbook' , full of plant-based recipes for disease prevention and support.
Ingredients:
Pitted dates 200gr
Walnut pieces 115gr
Rolled oats 100gr
Freshly grounded flaxseed 2 tbsp
Vanilla extract to taste
Ground cinnamon to taste
Raw cocoa small nibs 2 tsp
How to make the cookies:
Combine the dates, walnuts and oats in a food processor, and process until crumbly. Add the grounded flaxseed, vanilla extract and cinnamon and process until the dough holds together. If the mixture is too dry to hold together, add a little water, 1 tablespoon at the time as you don't want it to become too wet.
Scoop out about 1 tablespoon of the dough and roll it between your hands to form a ball, repeat until all the dough is used. Arrange the balls on a backing tray lined with a silicon mat or backing parchment, spaced liberally. Use a fork to press them down to flatten slightly and make a striped or crisscross pattern.
Refrigerate for 4 hours to firm up before serving.
